Irrigation

Hussein working the fields. The Nile is responsible for nearly all people’s food supplies around here through irrigation and agriculture. Fish does not really figure in the diet. One of the few fish dishes we did eat was Fasikh, a spicy fish sauce perfect for dipping falafel and bread. Fasikh Dried Fish Onion Tomato paste or a tin of chopped tomatoes Lemon Salt Chilli Garlic Pepper Coriander Peanut Butter (a kind of guess your own quantities recipe to your own taste) Wash the dried fish to de salt, then de bone and mince. Mince the onion. Fry the onion until golden, add the minced fish, a pinch of salt, chilli, pepper and coriander then stir well. Add the tomatoes and simmer gently until it reaches a runny jam consistency. A few minutes before serving add the peanut butter, garlic, and lemon. For the final consistency...if ya can eat it with a fork summat has gone wrong.
