I don't know the specific name of it, but it is fairly easy to make. Whip your egg whites and then with the mixer running, slowly drizzle in simple syrup that is at the softball stage (around 170 degrees). Remember to drizzle very slowly so the egg white cooks evenly. Pipe it onto your dessert and toast with a torch or under a broiler.
